    pork butt , trimmed
  • 14.5 oz
    fire-roasted diced tomatoes

    chipotle in adobo , chopped, plus 1 tbsp sauce

    yellow onion , diced
  • 4 clove
    garlic , minced
  • 1 cup
    chicken stock
  • 0.5 cup
    orange juice
  • 1 tbsp
    orange zest

    olive oil

  • black pepper , to taste

    Season pork butt generously with salt and pepper.

    Sear pork in olive oil in a Dutch oven over high heat until browned on all sides.

    Remove pork and set aside; add onion and garlic to the pot and saute until softened.

    Stir in fire-roasted tomatoes, chipotle in adobo, chicken stock, orange juice, and orange zest.

    Return pork to the pot, bring to a simmer, cover, and transfer to a 300F oven.

    Skim excess fat from the braising liquid, then reduce it on the stovetop until slightly thickened.
