Easy Perfect Lemon Garlic Mahi Mahi
Pan-seared mahi mahi fillets finished in the oven and topped with a bright, buttery lemon garlic sauce.
Ingredients

2 tbspsalted butter , softened to room temperature

1 tbspchives , freshly chopped (or parsley)

2 tbspgarlic , minced

0.125 tspkosher salt

0.25 tspblack pepper , freshly ground

1 tbsplemon juice , fresh

1 tbsplemon zest , grated

2 tbspolive oil

4mahi mahi fillet , 1-inch thick, 4oz each

kosher salt , to taste, for seasoning fish

black pepper , freshly ground, to taste, for seasoning fish

Preheat oven to 400°F with rack in the middle position.

In a small pan, combine butter, chives, garlic, salt, pepper, lemon juice, and lemon zest; stir to fully combine and set aside.

Pat fish fillets dry thoroughly with paper towels.

Sprinkle both sides of fillets evenly with kosher salt and black pepper; set aside.

Heat olive oil in a large oven-proof pan over high heat until sizzling hot.

Add fish fillets to the pan and cook without moving until browned on one side.

Flip fish fillets to the other side, turn off the burner, and immediately transfer the pan to the preheated oven.

Roast fish at 400°F until the top is golden and the center is just cooked through.

About a minute before the fish finishes cooking, heat the lemon garlic mixture in its small pan over medium-high heat, stirring constantly, until melted and bubbly.

Turn off heat and pour the lemon garlic mixture over the cooked fish, including any juices from the fish pan.
