Toasted Artichoke Sandwiches
A hearty vegetarian sandwich packed with sautéed artichokes, sweet red pepper, and onion in a Parmesan filling, spread with a sun-dried tomato mayo and griddle-toasted until golden.

8spinach leaves

0.33 cupsun-dried tomatoes , not packed in oil

8 slicesitalian bread , 1/2 inch thick; other bread may be substituted

1sweet red pepper , julienned

1onion , halved and thinly sliced

0.75 cupparmesan cheese , shredded

0.33 cupmayonnaise

1 tablespooncanola oil

14 ozartichoke hearts , water-packed, rinsed, drained, and chopped

Soften the butter.

Rinse, drain, and chop the artichoke hearts.

Julienne the red pepper.

Halve and thinly slice the onion.

In a large skillet, sauté the artichokes, red pepper, and onion in canola oil until tender.

Stir the Parmesan cheese into the artichoke mixture and remove from heat.

In a food processor, combine mayonnaise and sun-dried tomatoes; process until finely chopped.

Spread four bread slices with half of the mayonnaise mixture.

Layer each with a spinach leaf, the artichoke mixture, and another spinach leaf.

Spread the remaining bread slices with the remaining mayonnaise mixture and place on top to close the sandwiches.

Butter the outsides of the sandwiches.

Toast the sandwiches on a griddle for 2-3 minutes per side, or until the bread is lightly browned.
