Shrimp Tacos

Perfectly seasoned shrimp with cilantro-lime slaw and fresh avocado, all packed into a tortilla for a fast, flavorful taco night.

Ingredients

    shrimp , peeled and deveined

    garlic , minced

  • 1 tsp
    ground cumin
  • 1 tsp
    chili powder
  • 0.5 tsp
    onion powder
  • 4 tbsp
    olive oil , divided
  • 1 tbsp
    unsalted butter , or use additional olive oil

    lime , for juice
  • 2 cup
    green cabbage , shredded
  • 1
    avocado , large
  • tortilla , corn or flour, as needed
  • 2 cup
    cilantro lime sauce

    Pat both sides of the shrimp dry, then toss gently in a large bowl with the garlic, salt, cumin, chili powder, onion powder, and 3 tablespoons of olive oil.

    Cover and refrigerate the shrimp mixture while preparing the rest of the dish.

    In a large skillet, melt the butter with the remaining 1 tablespoon of olive oil.

    Add shrimp in a single layer and sauté, flipping halfway through, until they just turn pink.

    Remove shrimp from heat and transfer to a cutting board; cut off the tails.

    If desired, squeeze fresh lime juice over the shrimp.

    Remove 1/2 cup of the cilantro lime sauce and toss it with the shredded cabbage to make the slaw.

    Optionally, spray tortillas with olive oil cooking spray and grill over an open flame on the stovetop until slightly charred, or warm covered with a damp paper towel in the microwave.

    Fill tortillas with shrimp, a generous serving of slaw, and fresh avocado.

    Drizzle additional cilantro lime sauce over the tacos and serve with a squeeze of fresh lime juice.
